    Sucralose is an artificial sweetener also known (in the European Union) as E955. It is 600 times sweeter than sucrose (normal table sugar) and thermostable, that is, heat-resistant and therefore usable in cooking (unlike aspartame for example) and insensitive to a wide range of pH (also usable in fruit juices with a pH tending to acid or in products that use acidity as a method of preservation). Although sucralose is sugar-based, the sugar molecule is chemically modified to make sucralose which is classified as an artificial sweetener. Sucralose was discovered in 1976 by Leslie Hough and a young Indian chemist who, during tests on chlorinated sugars, accidentally (confusing the term “test” with “taste”) tasted this sugar and immediately realized the exceptionally sweet taste, from there the two began to perfect the final formula which, as mentioned, is 600 times sweeter than sucrose. It is not metabolized by the body for energy production, so it is calorie-free. The vast majority of ingested sucralose is not absorbed and simply passes through the digestive system. The small amount of sucralose that is absorbed is rapidly eliminated in the urine as sucralose. It can be considered the most stable artificial sweetener currently on the market, so much so that it can be used in many recipes completely replacing sugar. Sucralose can also be indicated by the acronym E955. The European Committee has set an ADI (acceptable daily intake) for sucralose of 15 mg per kg of body weight. Sucralose is particularly used in foods, supplements and dietary products. It can be helpful in low-calorie diets aimed at reducing body weight.
